Matzo Pizza

The celebration of Passover is this week and that means no bread, cake, cookies, cereal or pasta for me. (It’s basically the original Atkins diet.) But what I can eat is matzo…and lots of it. For those of you who don’t know, matzo is an unleavened bread aka a big, large cracker. I hosted a little matzo pizza party last night and put out various toppings (turkey pepperoni, mushrooms, etc…) and even made a gourmet-ish, “grown up” version with a fried egg on top. I actually like matzo pizza all year long – perfect for an afternoon snack, a healthier alternative to real heavy pizza and it’s especially fun for kids to make…and eat.

INGREDIENTS: 

Box of matzo

Pizza sauce

Shredded mozzarella cheese

Grated parmesan cheese

Basil

*Egg and any other toppings are optional. It’s delicious just on it’s own with sauce and cheese!

HOW TO MAKE: 

1. Spread tomato sauce on matzo.

2. Top with mozzarella and parmesan cheeses.

3. Add additional toppings like pepperoni or mushrooms if you like.

3. Bake at 400 degrees on a baking sheet (covered with aluminum foil) for 7 minutes, until cheese melts. Remove from oven.

4. Fry egg in pan.

*HOW TO FRY AN EGG: Heat skillet on medium heat for about 1-3 mins. Add a little butter or olive oil to the skillet (your choice) and then crack the egg directly into the skillet and let it be (don’t mess with it!) Turn down heat to low. Add salt and pepper directly on the egg. When egg turns all white and is cooked through, it’s done. Add fried egg on top of pizza.
