Corn Salad

Last weekend, some of my best friends came down to visit us in San Diego for the 4th of July.  We had a potluck bbq after a long day at the beach (which never fails to be the right combination for a happy afternoon!) Here’s a corn salad that I’ve been whipping up for outdoor get-togethers and cook outs. It takes 10 minutes to make and is really just assembling lots of delicious, healthy, goodness together in a bowl.

INGREDIENTS:

*Serves about 4-6 people* 

2 cups butter lettuce chopped

2 cups arugula chopped

2 cups cherry tomatoes sliced in half

2 cups of sweet canned corned

One avocado, diced

Crumbled feta cheese to taste

1 1/2 tbsp of olive oil

Squeeze lime juice to taste

Salt and Pepper to taste
