Antipasto Appetizer

Over the weekend, I had some friends over for appetizers and drinks before a girls night out. These antipasto skewers are really easy to make and assemble and are a great compliment to any other appetizers you choose to serve.

 INGREDIENTS: 

-One pack of skewers

-Greek olives (already marinated) in jars or from olive bar in speciality food stores and grocery stores

-One pack of three cheese tortellini (I used Buitoni)

-Balsamic Vinaigrette (homemade or store bought)

-Salami

-Mini pepperonis

-Marinated mozzarella

-Marinated artichoke hearts

HOW TO MAKE: 

1. Cook pasta and add 1 cup of balsamic vinaigrette over the top. Stir in well and refrigerate for at least an hour.

2. Drain the marinated pasta and place one of each item onto skewers.

*Can be made a few hours in advance or refrigerate overnight (cover tightly)
