Chips & Guac
Over the weekend, we went over to our friend’s house for a proper, sit-down, group dinner. I was in charge of making the app, so when she told me she was serving enchiladas, guac was obviously a must. We enjoyed guacamole, enchiladas and mexican ice cream with great company – a no fail recipe for a fun, tasty (and easy!) dinner party.
INGREDIENTS:
10 avocados
Feta or mexican crumbled cheese
2 tomatoes
2 large cloves garlic
(Kosher) Salt & Pepper
1/4 cup White onion
Hot sauce of your choice (I use Tabasco)
1 Lemon
HOW TO MAKE:
1. Add together: Sliced avocados, chopped and pitted tomatoes, diced onion, minced garlic. *I like mine chunky, so I just slice all with a knife in the mixing bowl.
2. Then add: Lemon juice, salt and pepper, cheese and hot sauce to taste. *Mix gently with a fork or spoon.
*You can cover (tightly!) with plastic wrap and refrigerate until ready to serve. And make sure to keep an avocado pit in the mixture to prevent browning.
Serve and enjoy! I loved the (rustic meets glamour) place settings.
