Baby Cakes
My friend, Kerri, recently made these for a new years eve party and it was love at first bite. She shared this (easy, semi-homemade) recipe with me and I made them right away. The individual sized bundt cakes came out tasting great and were especially good served with vanilla ice cream.
INGREDIENTS:
1 pkg chocolate cake mix
1 cup sour cream
4 eggs
1/2 cup oil
1 pkg instant chocolate pudding (small)
1/2 cup warm water
1/4 cup kalua
1 12oz pkg chocolate chips
HOW TO MAKE:
Step 1: Combine all ingredients (except chocolate chips) and stir to blend.
Step 2: Beat 3 minutes at medium speed
Step 3: Stir in chocolate chips
Step 4: Pour into greased bundt pans (I got mine at Williams-Sonoma)
Step 5: Bake at 350 for 45-50 minutes.
GLAZE: INGREDIENTS
1 cup powdered sugar
2 tablespoons butter
3 tablespoons choc, cocoa
1-3 tablespoons hot water
GLAZE: HOW TO MAKE
Step 1: Place a heatproof bowl over a pot of simmering water.
Step 2: Add the glaze ingredients and stir to melt and combine.
Step 3: Drizzle over top of cake and add powdered sugar if you like.
