FOOD FIX Fish Taco Fiesta
As we near the end of July, these fleeting days of Summer give me all the more reason to pack in as many (outside) gatherings with friends and family. So over the weekend, one of my best friends and I threw a very last minute get together for about 10 people. We decided on easy fish tacos with homemade guacamole, corn dip, fresh salsa and chips. I realized that it never fails to be a success when you’re serving a large group. We sat outdoors, drank margaritas and enjoyed our whipped up menu.
BLACK BEAN, CORN & FETA DIP
INGREDIENTS:
2 cans black beans (drained and rinsed)
2 cans corn (drained)
8 oz. feta cheese
1 bunch green onions (chopped)
1 red pepper (chopped) – optional
½ cup sugar
¾ cup apple cider vinegar
¾ cup vegetable oil
Garlic – to taste
Salt – to taste
Pepper – to taste
HOW TO MAKE:
Mix all ingredients and refrigerate overnight. Serve with your favorite tortilla chips.
EASY TACO TOPPING – CABBAGE MEDLEY
INGREDIENTS:
Zest and juice of 1 large lime
1 teaspoon apple cider vinegar
1 tablespoon sugar
1/2 teaspoon salt
1/3 cup canola oil
1 garlic clove, chopped
2 cups thinly sliced purple cabbage (about half of a 1 1/2-pound head)
2 cups thinly sliced green cabbage (about half of a 1 1/2-pound head)
1/2 cup thinly sliced red onion
Freshly ground pepper
HOW TO MAKE:
Place the lime zest and juice, vinegar, sugar, salt, oil, garlic in a blender or food processor and process until well combined.
Mix the purple and green cabbage and onions in a large bowl. Pour the dressing over the vegetables and toss to combine. Season to taste with salt and pepper. Cover and refrigerate for at least 2 hours (or overnight if you want to make a day in advance)
“SECRET” BAJA TACO SAUCE
INGREDIENTS:
1/3 Cup Salsa (make sure it’s Pace Picante)
2/3 Cup French Dressing
1 Cup Ranch Dressing
HOW TO MAKE:
Mix together and enjoy.
Side note: This extremely easy to make creamy Baja taco sauce is so delicious that you will never want anything else on your tacos again. Be warned!
